A day in life on Mother’s day

Mothers Day bbq was relaxing and a bit stressful at times.  That is what being a mother is.  My husband did the grilling of the meats and the vegetables, and I got everything set up. Being our set up was small, and dealing with barking dogs and little pests that seem to arrive when there is food present.  So with all that said; I did not take too many pictures.  IMG_2524

These were the Tomato Tulips that were stuffed with cream cheese and a little salt and my specialty blend of Herb de Provence. Green onions were used as the stems.  This was a very big hit, my mother n law and the other grandmothers that were present just loved the display and the tomatoes.  So big hit and eye pleaser for you parties to come.


This was a citrus grilled chicken, my husband put the recipe together and we both agreed it still needs some tweaking.  If any of you are from southern California or have eaten at El Pollo Loco, this is what we were trying to create was there awesome chicken.  It was tasty so there will be more pictures as we work on improving the flavor.


This was the Moroccan chicken recipe taken from Amy Densmore “The Paleo Cupboard Cookbook, real food real flavor”.  I have made this recipe several times, it is very good.  The marinate seasoning is: 4 tsp sea salt, 4 tsp paprika, 2 tsp ground ginger, 1 tsp black pepper, 1 tsp cumin, 1 tsp turmeric, 1 tsp oregano, 1/2 tsp cayenne pepper, 3 TB olive oil and 1/4 cup freshly squeezed lemon juice.  Place in a bowl with chicken ( I used chicken thighs) rub the spices into the chicken and marinate in the refrigerator covered for at least 2 hours to 24 hours.

We also had hamburgers and I made some gluten free poppy seed hamburger buns which were so yummy. IMG_2537

This recipe came from one of my favorite authors; Danielle Walker.  Her new cookbook “Celebrations”.   And it was funny because here I am looking for English muffin rings, the day before I need these. I was not about to go to several different grocery stores.  I live in Holland Mi and this was during tulip time; which is a big event here. Driving around in Holland is one thing.  So I used my creative brain and decided to buy some mason jar lids the big mouth ones.  I greased them down with coconut oil and placed them on parchment paper; on a cookie sheet and poured the batter in.  They cooked up just fine, and tasted really good, we sliced and placed our hamburger in between.  I also had made my own Mayonaise, which I have already shared the recipe.

Everything turned out wonderful, I made monster cookies and a strawberry icebox cake with recipes from Pinterest.  Everyone was enjoying their time and that’s what made this day very special.
