Being I am changing my eating a bit. I have been following Paleo diet for awhile. On Paleo, I was restricted to not eating any dairy. Though on Paleo I never really had to keep count of my calories. Now I am enjoying dairy again, and enjoying some new recipes from the Ketogenic lifestyle.
This past weekend we went camping and preparing meals was not hard. I prepared a really yummy pancake. We bought a grill and purchased a griddle to fit on top. Nothing like wonderful pancakes, with a cup of hot coffee sitting on a bench near the lake, outside and listening to the bird’s chirp.
Here is the recipe for these wonderful pancakes.
Blend all dry ingredients together. In a separate bowl combine the wet ingredients. Stir wet into dry.
Grease skillet with coconut oil and pour batter into skillet. Cook bottoms for about 2 minutes and flip.
I used leftover glaze from my cinnamon muffin recipe that consist of 3 TB coconut butter, 1 TB of Pyure and 1/2 tsp of maple extract.
I placed a piece of cheese on top.
This now is a new favorite in our home.
