This is Cajun Dirty Rice (Cauliflower)
This recipe is always a big hit, and for people who don’t care for vegetables, this one will forever change them.
You will need a medium head of cauliflower. Wash it and cut up and place in a food processor on shred.
In a bowl melt 2 Tb butter (ghee), 2 Tbs olive oil, 1 cup of chopped ham or sausage, 1/2 cup chopped onion, 1/2 cup chopped green pepper, 2 cloves of garlic minced. Then add your seasoning: 3/4 tsp cayenne, 1/2 tsp salt, 1/2 tsp black pepper, 3/4 tsp paprika, 1/4 tsp ground mustard, 1/4 tsp thyme, 1/4 tsp dried oregano, 1/2 tsp cumin
Blend all together and place either in foil to make a pocket and grill. Or place in skillet and cook till cauliflower is soft.
This is so good and so filling.
