I traveled to a soul food restaurant one day and was curious why there was no sweet potato pie on the menu. The lady behind the counter who let me know she was the owner and said she just doesn’t have time to make the pies. I went to my table and pondered on this for a minute. I mentioned to her that I used to take special orders for pies and sweet potato pies were my most popular item. She then asked me; “how about you make me a pie, and if I like it; You can come and make them for me.” I said sure.
Well, I have been doing this for about a little over a year now.
Here is my recipe for the pie filling:
1 lb sweet potatoes, peeled and chopped
1/2 evaporated milk
1 TB pure vanilla extract
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
3/4 cup sugar
1 stick (8 TB) of butter
Boil the sweet potatoes until soft. Drain water and use and Immersion blender to blend in the sugars and spices. Add your eggs and milk and vanilla. Lastly, add the butter.
Place pie filling into a premade crust and bake at 350 for 1 hour. Till center of pie is done by testing with a knife.
The trick to this pie is the Immersion blender, it will create a very silky smooth pie.
