A stalk of sour dipped in sugar.

Ruhbarb

As a kid, my mom had Rhubarb in the garden.  I remember taking a bowl of sugar and going out to the garden and breaking a piece of rhubarb off its stem and dipping it in the sugar.  Oh, soo good.  Childhood memories can be some of the best.  I guess you’re either someone who loves rhubarb or not.  Pies and cobblers and jams are just some of the ways to use this little unknown vegetable.   I am picky, I like it sour, very little sweet.

So I created this recipe to have along with my scone or just to eat on its own.

Rhubarb sour/sweet relish

Depending on what you are making the recipe for; you will want to add more stalks.

I used one stalk.. it made about 1/2 cup.

Wash stalk and dice up.   Make sure you do not eat the leafy part of the plant.  You may get very sick.

Place in a pan, and add 1/4 cup of water and steam over medium heat.

Add 3 TB of Pyure or any other sweetener you desire.  You taste to your liking.

Enjoy, this can be served with a pork loin, with a piece of toast, over ice cream, on anything you desire.
