Who doesn’t want a bite of cheesecake?

Going to New York City and walking through the grand central station is a wonderful experience.  It’s like a mall, but with so much uniqueness.  The Grand Central Station has a market place where they sell food like a farmers market, restaurants and clothing stores.   Walking through the restaurants with Pizza aroma in the air.  Then there is a line for cheesecake.  Well, you are in New York City, you must have to take in the food that made this city.

I went to New York City many times while residing in Massachusetts.  Every time I would come to the city, I had to have New York Style pizza that was a thin crust; and a piece of New York style cheesecake.  Junior is a bakery that sells cheesecake right in Grand Central Station.  I would buy a slice and eat in on the train on the way home.  Not all cheesecake is the same.  Junior’s is so yummy, it’s lightly sweetend and has no crust.  It’s moist and oh’ so delicious.

Oh’ I could babble on about Junior’s cheesecake.

Well as many knows, I am following the ketogenic lifestyle and being fat is my new friend.  Guess what is a good fat?  Cheese and cream cheese.  So that only means I can enjoy a cheesecake.  A diet that I can enjoy cheesecake.  I am in heaven.

I usually share the nutritional information after, but now I have to share it with you.

Oh’ My  Cheesecake

Recipe makes 2 servings

Each serving has: Calories 334, Fat 32g, Net Carbs 3g, Protein 9g

4 ounces of cream cheese softened

4 TB heavy cream

2 eggs

1 TB lemon juice

1 tsp vanilla extract

6 TB of Pyure sweetener

Place the cream cheese and the heavy cream in a heavy pot and heat over medium-low heat.  Stir as to melt the cheese.  Add in one egg at a time, keep stirring as to not scramble the egg, and the lemon juice, vanilla, and pyure sweetener.

When all ingredients are smooth and stirred in, remove from heat. If the mixture is chunky, take an emersion blender and whip till smooth.

Pour heated mixture into bowl and place in refrigerator until set and cool.

I made some strawberry whip cream.  I placed the whipping cream in a clean and dry bowl and added about 3 TB of strawberry extract and a little pyure sweetener to my added sweetness.  Blended and placed in frosting tube.

It tasted so good and brought many memories of being in New York enjoying the Cheesecakegoodness.
