So this past weekend I had a graduation party to go to and wanted to bring a delightful cookie along so that way I could indulge too, without being tempted by other desserts. So I made this delightful cookie that somewhat reminded be of a shortbread cookie.
Here are the ingredients:
1/2 cup coconut flour
1/4 cup flax seed meal
3 TB cream cheese softened
1/2 cup butter softened
1/4 cup pyure sweetener
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt
In a bowl, combine the butter, cream cheese and sweetener and cream together. Add the vanilla and egg till smooth. Add the dry ingredients: coconut flour, flax seed meal, baking powder and salt until combined.
Get a piece of wax paper or parchment paper and with spatula spoon out all the ingredients on the paper and make into an oblong shape. Twist the ends of each. Place in refrigerator for 1 hour.
Preheat oven 350 degrees. Line cookie sheet with parchment paper and slice and place on cookie sheet.
Bake 15-18 minutes Makes approximately 15 cookies

These are great to take along with you to a summer get together. You can also replace the vanilla extract for an almond extract and make a very delicious almond cookie. There are so many variations you can do in this recipe.
