On those cool summer mornings…chili is perfect.

breakfast chiliMore or less the time we generally eat chili is in the winter.  On a cool night, something to warm up the belly.   So living here in Michigan the weather is always unexplainable.  We live near the lake and many times it’s cooler here than inland.  Which makes that nice in all scenario’s.   I was flipping through the pages of many of my recipe books, getting some idea.  Chili is widespread, it’s basically whatever you want to put in it.  That’s why we have the contest and cook-offs.  It is a dish that you can be ultimately creative with.

I wanted something different for breakfast.  I prepared this the night before and then topped it off breakfast items the day.  Eggs and bacon.   So if in a hurry this is a great meal.  The nutritional info per serving of 1 cup is 440 calories, 34g fat, 25g protein, 5g net carbs.

I went into the freezer to see what I could throw into my chili.  I do not make chili with beans.  So I pulled out some hamburger and some chorizo and some ground pork.

Here is the recipe:

1/3 cup chopped onions, 1 green chili (as needed for heat), 1 bell pepper ( I used a variety to add up to a 1/2 cup chopped. 1/2 pound of hamburger, 1/2 pound ground pork and 1 pound of chorizo and I placed in the dutch oven I also added about 2 TB of bacon fat.  Browned the meat till all crumbly and veggies are glassy.

What are tomatoes without chili? There probably is a recipe out there that has no tomatoes.  Not this one.  I grabbed one (28-ounce) can of Tomatoes with juice, I take my emersion blender and blend while in the can.   Pour over the meat/veggie mixture. I added 1/2 cup of beef broth and 1 cup tomato sauce.   Also I had to add seasonings; 1 TB chili powder, 1 tsp ground oregano, 1/2 tsp dried sage, 2 tsp ground cumin, 1/4 tsp of cayenne pepper (more if you like heat), 1/2 tsp of sea salt, 1/2 tsp black pepper, 2 tsp of minced garlic and 1 TB of pyure.  Stir all to blend and then simmer on the stove on low for at least 2 hours.

After the simmering time is up, taste and add additional seasoning needed.   I placed in the refrigerator and pulled out next morning.  I added some cooked bacon, and avocado, hard boiled egg, and cilantro to mine.  Add whatever makes your heart happy, it could be sour cream or cheese.

This made my stomach satisfied.  Been enjoyed throughout out the day as other meals.
