I love me some ice cream and I want to believe that I gained so much weight from my addiction to sugar and the love of ice cream. I was one of those people whom could not buy ice cream at the store because I would eat the whole 1/2 gallon by myself. Going on Keto has taught me that I don’t have to give up on the things I love. I just need to make adjustments to the ingredients.
This ice cream that I prepared, made me so full. I never got protein or fat that I needed from my ice cream before. So this is a wonderful thing that now I can enjoy in moderation the simply sweet things in life.
I love coffee and better love it in ice cream.
Here is the nutritional information: Calories 670, Fat 68g, Protein 10g, Net Carbs 2g
For 1/3 cup per serving: of Black Walnut Coffee Chip Chunk Ice Cream:
3/4 cup plus 2 TB coconut oil melted
1/2 cup strong espresso coffee chilled
1/4 cup MCT oil
4 large eggs
4 large egg yolks
1 tsp vanilla extract
2 tsp walnut extract
2 TBL unsweetened cocoa powder
1/2 tsp sea salt
1/4 cup pyure sweetener
3 TB of 90% Chocolate bar cut into small chunks.
- Place all the ingredients in the blender, blend until smooth. Taste and add more sweetener if needed.
- Pour into ice cream maker and follow the manufacturer instructions per maker.
