Hot summer/cool salads #1

Cucumber appetizersNo matter where you live; there is a time that it’s just too hot to turn the oven on.  I hear my mother in law lips utter cool and crisp salads.   Being there is so many choices of putting a salad together can seem easy.

I wanted to share some recipes for some salads and easy snacks so they will be numbered.  With some variety and goodness in each blog post.

Cucumbers offer such a crisp and coolness.  I have fixed these with a cream cheese, dill mixture and topped with a tomato.

You can easily make this with any dip seasoning, and then atop the cucumber with it.

Dilly Cucumber’s

2 cucumbers half peeled

1 4-oz package of cream cheese softened

1/4 cup sour cream

1 TB  fresh or dried dill ( I used a freeze fresh)

1 tsp garlic salt

1 tsp of paprika

1 tsp salt

6 cherry tomatoes (cut in half)

1 Sprig of fresh dill

Peel cucumber, with leaving some part skin on. Slice up cucumbers and place on platter

Take your cream cheese and softened, mix in the seasonings and spoon the mixture into a cookie press or pastry bag to create an elegant squeeze.  A top with a sliced cherry tomato and cut some fresh dill for decor and yumminess.


Servings: 3 per serving with 5 servings total.
