Hot Summer-cool/salad #5

Niccose Salad

Is it beginning to get a little cooler?  Having a salad to cool the hot summer days is just what is needed.  Here is a Tuna Salad that will fill your tummy and help you relax from the heat.

Julie’s Tuna and Olive Salad.

Serves 2


3 cups of mixed greens

1 cup chopped finely purple cabbage

1/2 cup red and green olives or black

1 TB capers

1 can tuna

2 hardboiled eggs

Place the lettuce in the bottom of bowl or plate, add the purple cabbage, olives, capers and spread over the salad, add the tuna and then cut the hardboiled egg and place each half on salad.


3 TB MCT oil

1/4 cup lemon juice

1/2 medium shallot, chopped very fine

1 1/2 tsp fresh chopped thyme

1/2 tsp whole grain mustard

1 tsp fresh oregano

Salt and pepper to taste.

Whisk all the ingredients together and place on top of your salad.

I also topped my salad with a fried piece of cheese.  Here is yet another salad to make the hot summer nights not seem so hot.
