A one pan meal: Chicken and Squash Bruschetta

Chicken butternut squash one pot

Making one pot meals is nice when your time is not on our sides.   This was easy to prepare.  I keep a lot of seasonings in my pantry so see what works best for you.  You can add just poultry seasoning.

Chicken & Squash Bruschetta     Serves 4

Preheat oven 400

1 1/2 lb boneless, skinless chicken breast

sea salt and pepper to taste

1 medium butternut squash (peeled and seeded and cut into cubes)

2 TB avocado oil

2 cloves garlic, minced

1/4 tsp sage

1/4 tsp oregano

1/4 tsp marjoram

1/4 tsp thyme

1/8 tsp nutmeg

1 pint cherry or grape tomatoes

1/4 cup fresh basil

2 TB olive oil

2 TB Balsamic Vinegar

2 cloves  garlic minced

Sea salt

Preheat oven 400

  1. Place parchment paper on cookie sheet
  2. Get a medium sized bowl and add cut up chicken, squash, salt and pepper, avocado oil, garlic, sage, oregano, thyme, marjoram and nutmeg to the bowl.  Mix around to coat well.  Place on cookie sheet
  3. Bake in oven for 20-25 minutes.  Make sure the squash is tender.
  4. Add your cherry tomatoes, garlic, fresh basil, oil, vinegar and garlic , season with salt and stir around and plate.
  5. Enjoy
