Getting ready for the holiday season. Yes another year to wow the pants off your guest. I loved this one, because it really looked like a pumpkin. I love cheese balls and this one could definitely be adjusted to your liking.
Pumpkin cheese ball
8 oz cream cheese
8 oz vegetable cream cheese
2 T Hidden Valley Ranch Mix or a mixture of your own
3 green onion diced
1 red bell pepper diced ( save the top stem)
2 cups shredded cheddar cheese
Have cream cheese at room temperature, mix in mixer with hidden valley ranch. Add green onion and red pepper and 1 cup of shredded cheddar cheese. Blend all together.
Place plastic wrap on a counter, pour out the cheese. I used about four pieces of plastic wrap. Wrap the plastic wrap around the mixture forming a ball. Place remainder of cheese on plastic wrap and roll into the cheese ball. Make sure all is covered. Get 4 rubber bands and place one over the middle, then another going the opposite direction, and around. Til you get a shape of pumpkin. Store in refrigerator for 2-3 hours prior to serving.
When serving cut the rubber bands off, and peel the saran wrap off. Take the stem of the pepper and place into the top of your pumpkin. Place crackers on plate and enjoy!
