Salisbury Steak Meatballs and gravy served on top of mashed potatoes

Salsbury Steak MeatballsI found this luscious recipe on Pintrest and Joanna Cismaru was the author.  It is now a family favorite.  The recipe serves 8 and when I made this.  It was for just my husband and I .  So we had wonderful leftovers.

Meatballs:

1 1/2 lb ground beef

1/2 cup breadcrumbs

1 egg

1/4c coarse grain mustard

1 TB Worcestershire sauce

1 tsp salt

1/2 tsp pepper

1 tsp onion powder

2 Tb oil (I use avocado oil)

For Gravy:

2 TB butter

1 large onion

1 Tb Worcestershire sauce

1 cup beef broth

2 TB cornstarch

1/2 tsp salt

1 TB ketchup

parsley for garnish

For Mashed Potatoes

5 large potatoes, peeled  and chopped in to 1 inch cubes

1/2 stick butter

1/4 cup milk

1/4 cream cheese

salt and pepper to taste

  1. Add all the meatball ingredients except for oil to a large bowl, blend well with hands.  Shape into 1 inch meatballs.  You should get about 40 meatballs
  2. Add the oil to the skillet and heat over medium heat.  Add the meatballs and cook. Make in batches and set cooked aside.
  3. To same skillet, when finished with the meatballs add butter and melt. Add onion, and cook till soft and translucent.  In a bowl add the cornstarch to the beef broth and whisk.  Add to the onion and butter mixture.  Blend together for about 3-5 minutes.  Sauce should thicken.
  4. When the gravy is done, add the meatballs, spoon over the gravy to coat them all

For the Mashed Potatoes

  1. Peel and boil the potatoes for about 20 minutes till tender, checked with a fork
  2. Drain potatoes place in bowl, add milk, butter, cream cheese, salt and pepper and blend.

Serve…

Place a spoonful of mashed potatoes on plate and spoon the meatballs over top and garnish with parsley.
