Creamy chicken goodness in one pan

Chicken with balsamic carmelized onion cream sauce

Here is another meal for the weekly menu. As winter is approaching, those warm and cozy dinners feel so good.  This dish was full of flavor and warm for the soul.

Creamy chicken balsamic                 Serves 4

4 small chicken breast

salt and pepper

1/2 tsp garlic powder

1 TB olive oil

1/2 cup chopped onion chopped

2 TB butter

1/2 tsp fresh thyme

pinch of red pepper flakes

1 tsp sugar

2 tsp balsamic vinegar

1/2 cup chicken broth

1/2 cup heavy cream

  1. season the chicken with salt and pepper, garlic powder.
  2. heat the oil in skillet till hot
  3. cook the chicken till cooked throughout
  4. remove and place on plate
  5. add butter to pan
  6. add onions stir around pulling all the bits of flavor
  7. lower the heat to medium low, cook onions till translucent or soft
  8. add thyme, red pepper flakes, sugar, balsamic vinegar
  9. let the vinegar cook out  for a couple of minutes
  10. Slowly pour in the chicken broth
  11. this will help deg-laze the pan
  12. reduce the sauce for about 2-3 minutes
  13. add the cream
  14. add the chicken
  15. serve over rice or pasta ( I served over purred carrots)

I used thighs instead of breast.  I like the flavor of thighs, it tends to become more moist vs dry.
