Morning Favorite

Dutch babyGrowing up, when my mom was squeezing fresh lemon juice and placing bowls of powder sugar on the breakfast table I knew what is in the oven.  This morning favorite is called many names and my mothers name was “Dutch Babies”.  Others would call this dish German Pancakes.

This is a simple dish to prepare.  Blend and bake and watch it grow.   Its light and filling and can be served with fresh fruit and ham, bacon.

I grew up with having this with lemon juice and powder sugar.  Whatever you want to make it a special treat that up to you.

Dutch Babies

Servings 2-3    1/4 cup butter, 3 eggs, 3/4 cup milk, 3/4 cup flour= 8″ pie pan

Servings 3-4   1/3 cup butter, 4 eggs,  1 cup milk, 1 cup flour=9″ pan

Servings 4-5  1/2 cup butter, 5 eggs, 1 1/4 cup milk, 1  1/4 cup flour=10″ pan

Servings 5-6  1/2 cup butter, 6 eggs, 1 1/2 cup milk, 1 1/12 cup flour=10×13 pan

Preheat oven to 425.  Put butter in pan and place in the oven till melted.  Watch don’t burn.

Put eggs in blender and whirl until just blended, add milk and flour and blend.  Do not over mix (slightly lumpy)

Pour batter into hot melted butter

Bake 20-25 minutes till puffed and golden.

Serve with lemon juice and powder sugar, maple syrup, fresh fruit and whip cream, or warmed canned pie filling.
