Good morning casserole

Bacon egg and cheese casserole

One nice thing about a breakfast casserole is that you can make the night before.  Next morning turn on the coffee pot and stick in the oven.  I like easy breakfast.  I am all about enjoying my cup of hot coffee in the morning.  With all the disturbing news.  I tend to either watch cartoons or turn it to Netflix and dive right back into one of my shows.

Breakfast casserole:                   Serving 4

5 pieces of bacon, cooked crisp, cut in pieces

1/4 cup chopped onion (or just use green onion)

1/4 cup chopped yellow pepper

salt, pepper, garlic powder

2 TB fresh Thyme

6 eggs

1/4 cup milk

15 oz bag of frozen potatoes

1 cup of cheddar cheese

1/2 cup chopped tomato ( for garnish)

Instructions:

  1. Grease the bottom of cake pan
  2. add the frozen potatoes
  3. add the chopped pepper
  4. salt and pepper the potatoes
  5. sprinkle the bacon
  6. the eggs place in a bowl and whip up with the milk
  7. pour the eggs over the bacon and potatoes
  8. sprinkle the thyme over
  9. sprinkle the cheese
  10. Place saran wrap and place in the refrigerator overnight

AM:

Preheat the oven 350

Remove plastic wrap and place in oven for 30 minutes

Plate, add chopped tomatoes or hot sauce…. whatever suits your fancy
