So if your like me, getting those Sous Vide Bites at Starbucks are the best things. They are soft, and hot. I love the Gruyere Bacon ones. I started searching over the net for a recipe and realizing it just a few ingredients to make these babies.
One of the important tools you must have is a Sous Vide cooker. You can go on Amazon and search and you will find all kinds of different ones. I watched Youtube videos and wanted to learn more. I found one at a great price and now I use it all the time.
I purchased the Advanced PurAir. Its very easy to use. A Sous Vide allows you to cook anything to the correct Temperature. As you will see in picture below, the temperature that I was after to cook these egg bites was 171 degrees. Once it has reached the temp, then you add the eggs. Then set time. I cooked these for 1 hour. Now the nice thing. I did not eat them all at once. I placed the uneaten ones in a vacuumed sealed bag. When ready to eat, I just reheat the Sous Vide to 171 and warm up for 30 minutes.
This is the beginning. I have read several articles to whip up the eggs to have smooth texture. I could have used my immersion blender and made it more smooth consistency. You can do so many things to have whatever scramble you love.
Here is the recipe I made for 6 egg cups:
5 whole eggs
3 egg whites
1/4 cup of cottage cheese
1 piece of bacon
1 tsp of salt
1/2 cup of Havarti Cheese shredded
2 Tablespoons of chives.
1/2 tsp pepper
Blend well, use a immersion blender to have a silky consistency.
Place in mason jars, you can grease prior to pouring egg mixture in. But is not necessary.
Place in heated water of Sous Vide of 171 and set timer for 1 hour.
So secret: if you leaves these in the water for longer, its OKAY!! You will not overcook them. That is why I love this way of cooking. You can refrigerate and reheat and it will still be just as good.
If you decide to reheat, set the Sous Vide for 171 and set timer for 30 minutes.
