Making my valentine a dinner to remember.

Panko crusted salmonI have an amazing husband.  He is so patient, kind and spoils me to death.  I am a lucky girl to have such a wonderful husband.  I am so thrilled he has been after me to go for the stars and pursue my dream of cooking and attending culinary school.   To show my appreciation to him, I  prepared a dinner of love.

Through every ingredient that was added, the mixing and stirring, the cutting and chopping, the smiles the awe’s.  I enjoyed every minute of planning and preparing a wonderful meal.

Valentine Meal:

Panko crusted salmon with Parmesan herb butter.  Spinach, tomato cucumber salad with Sweet honey- ginger-Dijon dressing.  For dessert a valentine heart Bavarian cream, drizzled with chocolate and raspberry syrup.  Which I will share in a separate blog post.

I am here to share these recipes with you.  They are easy to throw together and more enjoyable to share a meal with that special someone.

Panko crusted Salmon with Parmesan herb butter:

2 pieces of farm fresh skinless salmon

1/4 cup of panko bread crumbs (if gluten free you can use gluten free bread crumbs or chopped finely almonds)

1 teaspoon of garlic salt

1 teaspoon of onion powder

1 teaspoon of pepper

1 Tablespoon of fresh flat parsley minced

1 scallion chopped finely

3 Tablespoons of microplane Parmesan cheese (basically grated very fine)

1 sprig of fresh thyme for garnish (place on last after cooked)

2 Tablespoons of butter

salt and pepper to taste

  1. Take your skinless salmon and place on piece of parchment paper, take your butter and spread over the salmon.
  2. Place all the ingredients in a bowl and mix thoroughly; pour mixture over salmon filet.
  3. Place in oven of 400 and cook for 10 minutes

You are looking for a light pink texture, when you put a fork to the piece of salmon it flakes.  That means its done.

Let rest as you make your salad dressing and prepare your salad.

Sweet Honey-Ginger-Dijon Dressing

1/4          cup light olive oil

4 TB        water

2 TB        Apple-Cider vinegar

1 TB        Fresh Ginger grated

2 TB        Dijon Mustard

1 large    Date

1 TB       Raw Honey

Blend with an immersion blender and add salt and pepper to taste.   Dressing will be thick,

For salad I used fresh baby spinach, tomato and cucumber and some micro greens.

Place all on plate, drizzle with dressing.

I used some balsamic glaze to add a pretty design to my plate and then placed the salmon on to plate.
